Gelato

Italian cuisine is characterized by its simplicity, with many dishes having only a few ingredients, and the cooks rely chiefly on the quality and freshness of the ingredients rather than on elaborate preparation. gelato is no exception. We make gelato, the Italian word for 'ice cream', using only the basic ingredients actually needed to give it a proper balance so the texture is dense, creamy and smooth, and the flavor distinctive and intense. Good things are simple.

In comparison, ice cream is made with more cream than milk whereas gelato is made with more milk than cream. Ice cream also uses eggs while gelato only uses egg yolks when the flavor requires it. As far as desserts go, gelato is one of the healthiest options. Typically gelato has fewer calories, sugar and fat than regular ice cream. Since gelato is dense and rich in flavor, a small portion can satiate your hunger far more than any other dessert, while also making you feel not as guilty. Our idea is to mix Italian excellences with local products, this is the reason we use Bronte pistachios, Piedmont hazelnuts and Italian cheeses together with as much American products as possible, always giving priority to the Californian products to promote and sustain local farms. We usually serve between 12 and 16 flavors of gelato and sorbets, and some of them are seasonal.

We also serve vegan gelato to provide options for all our customers dietary restrictions. We are absolutely against the use of products containing alginates, carraghenates, mono- and diglycerides of fatty acids and vegetable fats (especially hydrogenated, coconut oil and palm oil) except cocoa butter, which is an ingredient of chocolate, and we don’t alter the taste or appearance of gelato using artificial flavors or food colorants.
